Breakfast Recipes

Eggy Bread

1 slice of soft wholemeal bread
1 egg, well beaten with 2 tbsp of your child's usual milk e.g. S-26® PROGRESS GOLD®
A little oil for frying

Heat the oil in a frying pan. Dip the bread in the egg, turning to coat both sides well. Carefully place into the hot oil and fry until golden brown on both sides. Remove from the heat and place on kitchen paper to absorb any surplus oil.

Cut into tiny fingers and serve along with some slices of tomato or fruit.
You can also add some cinnamon to the egg mixture or use raisin bread to make a change.

Fruity Porridge

150 ml child's usual milk e.g. S-26® PROGRESS GOLD® 
15 g porridge oats
A handful of ready to eat dried apricots, chopped
1 large ripe pear, peeled, cored and cut into pieces

Put all the ingredients except for the pear into a small saucepan, bring to the boil and then simmer, stirring occasionally for a few minutes. Add the chopped pear then serve.

Cheese Scramble

1 egg
1 tbsp of your child's usual milk e.g. S-26® PROGRESS GOLD®
15 g butter
1 tbsp cheddar cheese, grated

Beat the egg with the milk, melt the butter over a low heat, and then add the egg mixture. Cook slowly, stirring all the time. When the mixture has thickened and looks soft but set, add the cheese then serve with some toast fingers.

Apple and Blackberry Porridge

150 ml of your child's's usual milk e.g. S-26® PROGRESS GOLD®
15 g porridge oats
A handful of blackberries
1 large ripe apple, peeled, cored and grated

Put the milk and oats into a small saucepan, bring to the boil and then simmer, stirring occasionally for a few minutes. Mix together with the grated apple and blackberries and simmer for a few minutes longer before serving.

Banana Porridge

150 ml of your child's usual milk e.g. S-26® PROGRESS GOLD®
15 g porridge oats
1 small ripe banana mashed

Put the milk and oats into a small saucepan, bring to the boil and then simmer, stirring occasionally for a few minutes.
Remove from the heat then mix with the mashed banana before serving.

Pear, Dates and Apples with Oats

1 small ripe pear, peeled, cored and grated
1 small apple, peeled, cored and grated
3 ready to eat dates finely chopped
2 tbsp porridge oats
4 tbsp unsweetened apple juice
2 tbsp water

Place the apple juice, water, and oats in a saucepan and bring to the boil and simmer for a few minutes. Add the fruit, cover and simmer for a couple more minutes, stirring occasionally.

Millet Porridge with Fruit

1 tbsp ground millet flakes
150 ml of your child's usual milk e.g. S-26® PROGRESS GOLD®
2 tbsp fruit purée or grated or chopped fruit

Place the ground millet and milk in a saucepan, bring to the boil and simmer for 12-15 minutes. Remove from the heat and mix with the fruit.

Rice Porridge with Fruit

1 tbsp ground brown rice flakes
150 ml of your child's usual milk e.g. S-26® PROGRESS GOLD®
2 tbsp fruit purée or grated or chopped fruit

Mix the ground rice flakes with a little water to get a smooth consistency. Add the remainder of the milk slowly to avoid lumps forming. Heat gently for 5-10 minutes or until cooked.
Remove from the heat and mix in the fruit.

Child Muesli

2 tbsp porridge oats
1 tbsp dried apricots, finely chopped
1 tbsp ground almonds
4 tbsp pure apple juice
½ small dessert apple, peeled cored and grated

Mix together the oats, apricots, apple and ground almonds in a bowl. Pour over the juice and leave to soak for 5 minutes then blend to the required consistency.

Fruity Muesli

65 g rolled oats
175 ml apple juice
1 tsp lemon juice
1 apple peeled and grated
1 pear peeled and chopped
1 small ripe banana
150 ml full-fat natural yoghurt

Mix the oats with the apple juice and refrigerate overnight. Next morning, mix the lemon juice with the grated apple and mix into the oat mixture with the banana, chopped pear and yoghurt.

Coconut Muesli

100 g porridge oats
100 g wheat flakes
3 tbsp sultana raisins
50 g dried chopped apricots
50 g chopped roasted hazelnuts
25 g desiccated coconut
1 dessert apple grated or other fresh fruit of your choice

Mix all the ingredients together except the fresh fruit and store in an airtight container. Add the fresh fruit before serving with your child's usual milk e.g. S-26® PROGRESS GOLD® or full-fat cows' milk.

Granola (Suitable for 1 year +)

100 g porridge oats
50 g seeds e.g. sunflower, sesame
50 g roasted nuts finely chopped
2 tbsp sunflower oil
3 tbsp runny honey
50 g sultana raisins
50 g dried apple pieces, finely chopped

Preheat the oven to 140°C/275°F. Mix the seeds and nuts together in a bowl.
Heat the oil and honey in a saucepan until melted, remove from the heat, add the oat mixture and stir well. Divide the mixture on to two baking sheets and spread out evenly.

Cook for 40 minutes or until crisp, stirring occasionally to prevent sticking. Remove from the oven and mix in the sultanas and dried apple. Cool and store in an air tight container.

Mixed Fruit & Yoghurt

Chop up a selection of fruit and serve mixed with full-fat natural yoghurt and some toast fingers.
